“Mummy can we have that marshmallowy dessert today?” is the usual request of my younger boy on Fridays.

This dessert is something that happened quite by accident. My aunt used to make a delicious Pavlova when we were little and I had a treasured copy of the recipe for many years.
It was only after my kids started appreciating food that I decided to try this dessert out myself. And so I did. But something was not the same. The Pavlova is supposed to taste like “kisses” and is then topped with cream and fruit of your choice.

I think I either took it out of the oven too fast or something was not done quite correctly; the huge "kiss" turned out to have a very thin crust and a marshmallow filling!

The kids loved it and now it has become my own little invention. I experiment with it now and make it in flavors of chocolate, mint and vanilla.
I remember serving it at a dinner for friends and when someone asked me for the recipe I did not have one! Many years have passed since I made this delicious mistake.

If you'd like to make a mistake of your own, just beat around 8 eggs;
add sugar and flavoring just as you please. Bake it at the lowest
temperature in the oven for about half an hour, and leave it in for
about another half hour after turning the temperature off. Take it out
and garnish it with whatever topping you please and serve!
